Speed Cooking
Ovens that Cook FastUAKC can put your cooking on the fast trackThere has been a lot of development in ovens that cook quickly. Thanks to convection cooking, there's no more waiting all day for the turkey to cook. With microwave ovens many foods can be reheated in just a couple of minutes. With the advanced technology included in GE's Advantium and Viking's TurboChef, the disadvantages of traditional microwave cooking go away, but the food is still cooking at a lightning fast speed. Steam cooking has begun to make a big mark in speed cooking not just because of its speed, but because it preserves foods nutrients, flavor, and color.Let's review a few of the ovens that will cook your food faster.Thermador Steam OvenThermador is a pioneer in this category, while many others have joined in with a variety of steam options. Microwave Oven Advances Improve Results
Speed Cook Advantium Microwave from GEIf it's been a few years since you've purchased a microwave oven, you owe it to yourself to check out the advances in microwave technology that have occurred. For example, GE's Advantium® technology described below provides unsurpassed results thanks to halogen lights:WHAT IS ADVANTIUM TECHNOLOGY?Advantium technology harnesses the power of light. The outside of the food is cooked like a conventional oven, with radiant heat produced by halogen bulbs above and below the food. This halogen-produced heat receives a boost of microwave energy. The result? Foods brown and cook evenly and fast, while retaining their natural moisture. In addition to the cooking excellence, Advantium® allows you to cook using FOUR different modes:ADVANTIUM PROVIDES VERSATILITYAdvantium offers 4 ovens in 1 - Speedcook,True European Convection, Sensor Microwave, and Warming/Proofing ovens - and comes in several different configurations to fit any kitchen design.Advantium ovens are available as Over-the-Range Micro-Hood combination, Single Wall-Oven, Combination Advantium Conventional Wall-Oven. Viking Turbo Chef Oven
New Viking Turbo Chef oven now in production We've written before about Viking's Turbo Chef oven. It's probably the first new technology in speed cooking for the home since the microwave oven. The air impingement technology is used widely in commercial applications by Viking's parent company, Middleby. However, this will be its first *serious launch for home use by a full-line major appliance company. The Viking Turbo Chef oven uses traditional radiant heating, combined with convection, microwave assist, and powerful Airspeed Technology™. Using patented jetplates on the top and bottom of the oven heated air is forced over the food at various speeds helping the food to cook up to 15 times faster than conventional ovens. How does that translate? Well, a 12 lb. turkey will cook in the Turbo Chef in only 42 minutes; 20 spears of asparagus in just 45 seconds. COMMERCIAL PERFORMANCE 7 Speedcook modes: Bake, Roast, Broil, Air-Crisp, Toast, Dehydrate, and Favorites "Favorites" stores your custom recipes Advanced mode for manual adjustments Microwave, defrost, and standard convection bake modes Accompanying the the Turbo Chef upper oven, is a full-featured 3.8cu.ft. self-cleaning convection oven/proofing oven/warming oven. GE Advantium
Speed Cooking at Work See it at Universal Appliance and Kitchen Center Many of us probably think of microwave cooking when we hear the term Speed Cooking, and microwave assist is certainly a part of today's speed cooking systems. However, it is a mistake to think of these products as merely microwave ovens. What is Advantium? Here's how GE describes this technology: Advantium technology harnesses the power of light. The outside of the food is cooked like a conventional oven, with radiant heat produced by halogen bulbs above and below the food. This halogen-produced heat receives a boost of microwave energy. The result? Foods brown and cook evenly and fast, while retaining their natural moisture. So, Advantium uses halogen bulbs to quickly heat food with conventional radiant type heat. At the same time, the Advantium oven receives a microwave boost from the oven's magnetron tube. The results are amazing. You get all the advantages of conventional cooking- evenly cooked and browned, moist food, with the speed provided by powerful halogen lights assisted with microwave energy. And for those items that you wish to cook conventionally or with convection, this double oven unit has a full-sized oven with convection in addition to the upper Advantium oven. See GE's Advantium for yourself at one of the Universal Appliance and Kitchen Center (UAKC) showrooms in Studio City or Calabasas, Ca. GE Profile™ Series 30 in. Speed Cooking Technology
High Speed Cooking in New Ovens Speed Ovens at Universal Appliance and Kitchen Center The Speed Cooking oven category has been around since the 1990's. All of the big mass brands now have some version of speed cooking, and several of the luxury brands also offer a speed cooking oven. They do this by using some combination of cooking methods including conventional electric elements, convection fans, microwaves, halogen lights, and "air impingement". You can find most of the brands offering speed cooking ovens at Universal Appliance and Kitchen Center. In addition to the obvious benefit of cooking food much faster, there are other benefits to owning a speed cook oven, one of which is tremendous flexibility. In general, these ovens gives you the choice of using conventional, convection, or microwave, as you please, OR in combination to get better results faster. The GE Advantium offers the biggest selection of speed cook models. Bosch is new to the category with their newly launched line of ovens including a speed cook model. Jenn-Air offers an auto sensor steam cook feature in their speed cook convection and microwave oven. The Viking Turbo Chef air impingement system will launch this fall. Air impingement technology speeds cooking by forcing preheated air into the oven at high speed through tiny holes. It's a high pressure version of convection cooking. These four brands each have different systems with their own benefits and are representative of the variety of speed cook ovens you'll find. For in depth information -

Trade shows allow manufacturers to display their products to the builders, contractors, dealers, distributors, designers, and remodelers who purchase and use their products. Manufacturers often show new products to get opinions and recommendations from industry veterans. The shows also provide an annual opportunity for customers to meet with suppliers, discuss concerns, and plan the year ahead. Just to give you an idea, induction cooking has been previewed at these shows for at least 10-15 years. Now, it is finally a reality with nearly all cooking product manufacturers offering some induction cooktops and/or ranges. Similarly, various speed cooking products have been shown over the years with mixed success. Both GE and Whirlpool have versions (Advantium and Velos) on the market now, but Thermador's Jet Impingement system shown in the early 2000's never launched. What will we see this year?
