New Viking Turbo Chef oven now in production We've written before about Viking's Turbo Chef oven. It's probably the first new technology in speed cooking for the home since the microwave oven. The air impingement technology is used widely in commercial applications by Viking's parent company, Middleby. However, this will be its first *serious launch for home use by a full-line major appliance company. The Viking Turbo Chef oven uses traditional radiant heating, combined with convection, microwave assist, and powerful Airspeed Technology™. Using patented jetplates on the top and bottom of the oven heated air is forced over the food at various speeds helping the food to cook up to 15 times faster than conventional ovens. How does that translate? Well, a 12 lb. turkey will cook in the Turbo Chef in only 42 minutes; 20 spears of asparagus in just 45 seconds. Speed Cooking at Work See it at Universal Appliance and Kitchen Center Many of us probably think of microwave cooking when we hear the term Speed Cooking, and microwave assist is certainly a part of today's speed cooking systems. However, it is a mistake to think of these products as merely microwave ovens. What is Advantium? Here's how GE describes this technology: Advantium technology harnesses the power of light. The outside of the food is cooked like a conventional oven, with radiant heat produced by halogen bulbs above and below the food. This halogen-produced heat receives a boost of microwave energy. The result? Foods brown and cook evenly and fast, while retaining their natural moisture. So, Advantium uses halogen bulbs to quickly heat food with conventional radiant type heat. At the same time, the Advantium oven receives a microwave boost from the oven's magnetron tube. The results are amazing. You get all the advantages of conventional cooking- evenly cooked and browned, moist food, with the speed provided by powerful halogen lights assisted with microwave energy. High Speed Cooking in New Ovens Speed Ovens at Universal Appliance and Kitchen Center The Speed Cooking oven category has been around since the 1990's. All of the big mass brands now have some version of speed cooking, and several of the luxury brands also offer a speed cooking oven. They do this by using some combination of cooking methods including conventional electric elements, convection fans, microwaves, halogen lights, and "air impingement". You can find most of the brands offering speed cooking ovens at Universal Appliance and Kitchen Center. In addition to the obvious benefit of cooking food much faster, there are other benefits to owning a speed cook oven, one of which is tremendous flexibility. In general, these ovens gives you the choice of using conventional, convection, or microwave, as you please, OR in combination to get better results faster. The GE Advantium offers the biggest selection of speed cook models. Bosch is new to the category with their newly launched line of ovens including a speed cook model. Jenn-Air offers an auto sensor steam cook feature in their speed cook convection and microwave oven. The Viking Turbo Chef air impingement system will launch this fall. Air impingement technology speeds cooking by forcing preheated air into the oven at high speed through tiny holes. It's a high pressure version of convection cooking.
