From Pork Tenderloin Dinner to Pork Sliders
GE's Slider Recipe
Last week we offered up GE's terrific recipe for Pork Tenderloin, but what about the leftovers? Often my favorite meals are the awesome and creative leftover solutions. Here's a recipe for sliders using leftover pork tenderloin. Yummy!
A tasty way to use up leftovers from our delicious Dijon-Thyme Roasted Pork Tenderloin recipe. Slices of pork and a zesty aioli make for delicious little sandwiches.
INGREDIENTS:
½ recipe Dijon-Thyme Roasted Pork Tenderloin
½ cup mayonnaise
¼ cup pan sauce
1 teaspoon lemon juice
3 cups arugula
6 small buns
METHOD:
Slice the leftover pork into ½ inch slices. To make the aioli, combine mayonnaise, pan sauce and lemon juice in a small bowl. Spread aioli on to each half of the bun. Top with 2 slices of pork and a handful of arugula. Sprinkle arugula with more lemon juice and top with the other half of the bun.
